my go-to quick and easy dinner! throw some sliced onions and peppers in a deep pan, get them nice and browned, add garlic, smoked paprika and cumin, plus a can of whole peeled tomatoes (crushed between your fingers). Let that simmer for while, then dig out some holes and crack eggs into them. cover until eggs are set, then top with cilantro, parsley, whatever you want. takes half an hour tops and looks impressive

I'm not new to shakshuka, but only recently I realised how easy yet elevated it is as a quick dish. I use canned tomatoes so there's minimal food chopping involved except for a bell pepper and garlic clove. First I fry some gochujang in the pan, then I add the garlic, peppers and some spices before pouring the tomatoes into the pan. Let is simmer and thicken, then make small wells in the sauce to plop the eggs into. Let the eggs cook, and voila! An actual meal that's healthy and hearty. Love it!

toss cubed eggplant with olive oil, s+p, cumin, coriander, and paprika; roast in the oven until browned; dump the whole sheet pan into your fav shakshuka recipe just before adding eggs.

- Shakshuka is the classic but prob too labor intensive (but a frozen or jarred shakshuka base actually works well on my experience and greatly speeds up the process) - Strapatsada is a delicious Greek dish I call “pizza eggs.” I will thinly slice a clove of garlic, fry it in some olive oil, then add oregano, grated tomatoes, and cook down. At the end add beaten eggs and cook until they’re done and you have a soft creamy eggy tomatoes mess. Feta is the best topping but if you’re watching sat fat you could add some olives or a green like arugula for extra fiber. I like eating it with crusty bread. It’s not as fast as cereal but it’s pretty hands off and you could prep beforehand. it’s not the absolute fastest but sooo worth it!! - Chinese Tomato Eggs - delicious, a little sweeter, tangier, and chunkier than the greek version but can be made even faster with more customization to your palette. I prefer to have this one over rice. You’ll find a ton of. versions online and at this point i just follow an amalgamation of recipe videos in my head. I like cooking with lau in general so I linked his recipe at the top of this rec. Closing thoughts: anything is breakfast if it’s the first meal you eat!! I go with my heart and vibe and will eat leftovers for breakfast or make something that is usually considered a dinner or lunch food like a BLT or a cheese plate with a ton of raw onions. Free your find from the prison that is the american industrial complex and make yourself a bbq sandwich first thing in the morning!! *edit to add another tomato banger that isn’t egg but fits the vibe and is very suited to meal prep* Paneer bhurji!! One of my fav easy dishes and it has a texture similar to the greek eggs listed above but with cheese instead of egg and more fresh spices like cumin and aromatics. this is not one i’d whip up first thing in the morning but it’s a satisfying delicious protein-packed dish you can heat up in the morning and eat with some rice or naan or even just some toast, it’s delicious any way you serve it. Again, i sort of follow an amalgam of recipes but i like to crumble my paneer instead of grate it. try this paneer bhurji video from Hebbars kitchen as a starting point. this is also a great dish if you want to try making your own paneer since the firmness isn’t as important as you’ll crumble it up anyway. thanks for this ask bc i forgot about all these lovely dishes since last tomato season!!

every day, i try to incorporate: 1) some form of exercise 2) time outside (can be combined with exercise) 3) talking to/seeing a friend (or even a stranger, the important thing is social contact) 4) an intellectually stimulating activity that gives you a feeling of accomplishment (reading, practicing a language, doing a puzzle etc) 5) self care (nails, facial masks, body oil, or hell just a shower if that’s what you need) when I maintain this routine my mental health stays fairly manageable! you can get through it đŸ’Ș

clichĂ© i know but do something challenging with your body! go for a run, ride a bike, do some yoga.. it takes your mind off things and makes you feel productive. keep that up for a while and even if you’re still feeling down at least you’ll look good 👍
