The recipe is already so simple but I make it even simpler sometimes. Literally just pasta, cut up vegetables (I have a food processor which makes it easy) and whatever seasonings you have on hand. Plus olive oil obviously but that goes without saying. Most recently I did this with broccoli since I had a ton and I can't stand eating it raw.

i do a few that i love but one of the easiest is lemon brocc pasta: rotini (or penne), head or two of broccoli, loooots of spinach, lots of minced garlic (store bought is ok!), few tbsp lemon juice to taste, pinch of salt and pepper, ample parmesan pasta obv takes a bit but there’s basically no prep. if you really wanna save more time/energy literally just get microwave broccoli/chopped spinach instead of fresh lol. and if you’re cooking for one, an entire box of pasta will make quite a few meals for your next lunches and dinners, and it microwaves well! so you get the home cooked meal vibe for a few days without too much work

put some olive oil in a pan, when it gets hot throw some garlic in. when that's gotten nice and smelly, put some heavy cream in. add spices, i like to use oregano, rosemary, thyme, and basil (paste form is the best). stir. add tomato paste, one that comes in a tube is best bc it's easiest. shred parmesan (don't use pre-shredded, it won't melt right. using a rotary grater is best bc it makes it easier for u). i like to add a little chili powder to taste but at this point just adjust the amounts of everything to your liking; personally i prefer the tomato flavor to be just as powerful as the cheese flavor. when everything is melted and mixed in, take off heat and toss in your choice of pasta-- i like farfalle because i love to have fun. bam, you're done, and once you get the hang of it you can do it all in one pan so it's less dishes

It can be easy, cheap, and makes good leftovers. Sometimes I will just doctor up a jar-sauce and add fresh basil and parm and it is pretty good for the amount of effort. If I feel like I need more protein or veggies it is easy to add. I recently tried a recipe that has anchovies, green olives, garlic, capers, cherry tomatoes, and lots of olive oil. I liked it a lot, but realize it is not for everyone.
