- Stir fry any vegetable you find in your fridge/pantry (beans add a lot of protein btw, I really like edamame and black beans in my stir fries)
-> add a tortilla and guac and you'll have delicious tacos
- salads, with tofu, chickpeas, nuts, etc., with dressings like tzaziki
- dumplings, gyozas, wontons, pierogis, samosas, raviolis, empanadas, ... with veggie fillings
- Soups and stews, which are really easy to cook, e.g. tomato soup, pumpkin soup, etc.
-> curry soups or stews, especially indian curries, you'll find many vegetarian and vegan recipes online with tofu or chickpeas
