MUST be full fat cottage cheese, and I spend a little more for the nicer stuff that almost has a ricotta-like texture (I don’t wanna hear cottage cheese slander if you’ve only ever had low-fat Kemps). Butter up a thick slice of toasted sourdough, spread on a layer of cottage cheese, then add toppings. My absolute favorite is with chili crisp, but when I need something sweet, blueberries+honey is decadent.
